  • 15 strips Patrick Cudahy® Black Forest Bacon
  • (3) 12-inch flour tortillas
  • 2 c. Monterey Jack cheese, shredded
  • 4 oz. pineapple, diced
  • 2 roasted jalapeños, seeded & chopped
  • 1 Spanish onion, grilled & chopped fine
  • Chipotle Lime Crema:
  • 2 c. sour cream
  • 2 tbsp. chipotle peppers in adobo sauce, minced
  • 1 tbsp. cilantro leaves, minced
  • 2 limes, juiced


  • 1. Make the Chipotle Lime Crema. In a small bowl, add the sour cream, lime juice, chipotle peppers and cilantro and whisk until all ingredients are incorporated. Set aside.
  • 2. Cook the Patrick Cudahy® Black Forest Bacon until crisp and reserve.
  • 3. In a small mixing bowl, place the pineapple, roasted jalapeños and chopped onion and mix together.
  • 4. Lay out the tortillas on a flat surface and sprinkle the Monterey jack cheese to cover the surface. On one half of each tortilla, lay out 5 strips of bacon. Sprinkle the pineapple mixture on the bacon.
  • 5. Pre-heat a griddle to 350ºF, add a tablespoon of cooking oil and cook the tortilla until the cheese is melted.
  • 6. Once the cheese is melted, fold the tortilla over so it is closed. Cut each Bacon-Dilla into fourths and serve with the Chipotle Lime Crema.
