  • 1 Patrick Cudahy Whole Boneless Ham (about 12.5 lb.)
  • Glaze (choose one)
  • Whiskey Glaze:
  • ¼ cup dark brown sugar, packed
  • ¼ cup bourbon whiskey
  • ¼ cup maple syrup
  • 2 tbsp. orange zest, fresh
  • Honey & Brown Sugar Glaze:
  • 1/3 cup dark brown sugar, packed
  • 2 tbsp. honey
  • ½ tsp. ground allspice


  • 1. Preheat your oven to 325F, and prepare your glaze (recipes below).
  • 2. Remove all packaging and wrap from ham, and place in a shallow roasting pan, flat-side down.
  • 3. Carefully spread about half of the glaze over the top and sides of the ham, set aside remaining glaze.
  • 4. Cover with aluminum foil, and bake 15 minutes per pound, or until internal temp reaches 140F and center is warm. Heating time may vary based on oven. About 20 minutes before ham is done, remove foil and brush another 1–2 tablespoons of the glaze onto the ham. Return to the oven and bake uncovered.
  • 5. When ham is glazed and done, remove from oven, cover loosely with foil, and let stand for 10 minutes before carving. Slice into 1/8"-thick slices, and serve with remaining glaze. Enjoy!
  • For the Whiskey Glaze
  • In a small heavy saucepan, combine the brown sugar, bourbon and syrup. Bring to a boil. Reduce heat, and simmer over medium low 5–7 minutes, stirring frequently until slightly reduced and thickened. Remove from heat and stir in orange zest. Set aside.
  • For the Honey & Brown Sugar Glaze
  • In a small bowl, combine brown sugar, honey and allspice. Mix well; result will be crumbly. Set aside.
