Ham & Cheese Stuffed Chicken Breast

  • 4 oz Patrick Cudahy® Maple Brown Sugar Ham, chopped
  • 2 - 6 oz chicken breasts, pounded thin
  • ¾ cup pepperjack cheese, shredded
  • 2 tbsp green chilies
  • 2 cups chopped spinach, sautéed, cooled and drained
  • 1 cup flour
  • 3 eggs, beaten
  • 2 cups panko crumbs
  • ½ cup grainy mustard
  • 2 tsp honey
  • 2 tsp horseradish
  • Oil for cooking
  • Toothpicks

Jumpstart your week-day dinner lineup with these easy-to-prepare stuffed chicken breasts.


  • 1. Preheat oven to 350 degrees
  • 2. Place chicken breast on clean work surface and season with salt and pepper.
  • 3. In a mixing bowl combine Patrick Cudahy® Ham, cheese, green chilies and spinach.
  • 4. Place half of Patrick Cudahy® Ham and spinach mixture in center of each chicken breast and fold chicken over mixture to seal. Secure with toothpicks.
  • 5. Beat eggs in a shallow bowl. Dip chicken in egg, then flour, then panko crumbs.
  • 6. In a large skillet over medium heat, cook chicken in a few tablespoons of oil for about 2 minutes on each side. Transfer to a greased baking sheet and finish chicken in the oven for 8 minutes, or until an internal thermometer reads 165?. Allow to rest, remove toothpicks, and slice on diagonal.
  • 7. Using the same skillet, warm pan juices over medium heat and combine mustard, honey and horseradish until just heated through. Serve over chicken.
