 Patrick Cudahy’s Sweet Apple-Wood Smoked Bacon is produced from only fresh select hand trimmed pork bellies. Bellies are graded for size, cured and naturally smoked in a blend of Sweet Apple-Wood and hardwood, using the traditional “Old World” process we’ve used for generations. Simply put, the closer we trim to the center of the belly the higher the quality and the leaner the bacon. All grades are naturally smoked with Sweet Apple-Wood to give the same consistent rich flavor that Patrick Cudahy bacon is known for.
