Sausage for Pizza
Our Pizza Sausage offers an economical alternative to pepperoni. Pizza Sausage is made with the same quality standards as our Pepperoni with one exception-it has a shorter drying cycle.
Genoa Salami
This salami has its origin in Genoa, Italy. Select cuts of Pork and Beef are blended with imported spices for a tangy, "Old World Flavor."
Hard Salami
This product is very similar to Genoa salami, but is "Hardwood Smoked: and does not contain wine.
Soppressatta Salami
This imported style salami is produced in a natural casing and is string tied for a truly "Old World" appearance. This all-pork product is fromulated with wine to produce a tangy flavor similar to a fine Genoa salami.
Deli (sandwich) Pepperoni
A larger diameter stick pepperoni perfect for sandwiches, calzones or deli tray applications. Deli pepperoni has a spicy, "Old World" flavor.
Link Pepperoni
Twin link pepperoni, approximately eleven inches in length, possesses the same appearance, flavor and quality as other Pavone Pepperoni products.
Capicolla
This "Italian Classic" is made from whole trimmed pork butts, hand rolled in crushed red pepper, paprika and other Italian spices, then naturally smoked for a delightful taste sensation.
Hot Ham
Hot Ham is similar to Capricolla, but is made with ham muscles instead of pork butts. Hot ham has improved slicing characteristics and is approximately 95% fat free.
Mortadella
Mortadella is a specialty variation of bologna containing whole peppercorns, small fat pieces and a touch of coriander. A very flavorful item ideal for deli sandwiches.
Prosciutto (parma style)
Starting with select, bone in hams, this upscale deli item is dry cured for approximately 10 months with a delicate balance of traditional spices and herbs, producing an unmistakable flavor and texture reminiscent of prosciutto from the Parma region of Italy.
Prosciutto (domestic style)
This prosciutto is made with select, lean boneless ham muscles which are dry cured for up to four months, producing a delightful, mild flavor.
Pancetta
Often referred to as Italian Bacon, this product is carefully cured to create a sweet taste and buttery texture. Pancetta is produced from pork bellies rubbed with salt and spices, then aged for approximately four weeks. |
