Aunt Violet's Famous Seven Layer Salad ^ back to list
You will need:
1 package of Patrick Cudahy Regular or Thick Sliced Bacon, cooked, drained, and crumbled
• 1 head lettuce
• 2 stalks chopped celery
• 1 medium chopped onion
• 1 medium chopped green bell pepper
• 1 10oz. package frozen peas (don't cook)
• 1 pint mayonnaise
• 1 Tbsp. sugar
• 1 cup grated cheddar cheese


Directions:
Tear lettuce into small pieces. Place on the bottom of a long glass cake dish. Add all ingredients in layers in the order given then sprinkle with Patrick Cudahy Bacon. Cover tightly and refrigerate overnight.
Preparation time: 5 minutes

BLT Bruschetta ^ back to list
You will need:
• 1 package of Patrick Cudahy Regular or Thick Sliced Bacon, cooked, drained, and crumbled
• 1 French baguette
• 2 Tbsp. light olive oil
• 4 tomatoes, diced
• 2 Tbsp. fresh basil chopped
• 2 Tbsp. fresh oregano, chopped
• 2 tsp. garlic finely minced
• 16 oz. asiago, cheese, shredded
• 10 oz. provolone cheese, sliced thin
• Ground white pepper


Directions:
1. Slice baguette into 1/2" thick diagonal slices and arrange on a baking sheet.
2. Brush each slice lightly with olive oil on both sides.
3. Top each slice evenly with:
- Patrick Cudahy Bacon
- Garlic
- Basil & oregano
- White pepper
- Asiago cheese
- Provolone cheese
- Diced tomatoes
4. Bake in 350° oven for 7-10 minutes or until cheese begins to melt.
5. Remove from baking sheet and enjoy.


Bacon Carbonara ^ back to list
You will need:
1 package of Patrick Cudahy Regular or Thick Sliced Bacon, cooked, drained, and crumbled
• 8 eggs, room temperature
• 1/2 cup heavy cream
• 2 cups Parmaesan cheese, grated or shredded
• 2 lbs. dry fettuccine, semolina or spinach
• 1/2 cup butter, softened
• 1/2 cup parsley, chopped
• 2 cups fresh spring peas
• 1 cup mushrooms (sliced or button)
• 1 cup light olive oil
• 1/4 cup basil, chopped


Directions:
1. Beat together:
- Eggs
- Cheese
- Butter
- Basil

2. Cook pasta, drain and return to pan while still hot.
3. Toss hot pasta with cream, egg and butter until butter has melted completely.
4. Add Patrick Cudahy Bcaon, tomatoes, spring peas, mushrooms and olive oil. Toss lightly but thoroughly to avoid bruising the tomatoes and peas.
5. Add fresh ground black pepper and parsley to taste at table-side.

You will need:
1 package of Patrick Cudahy Regular or Thick Sliced Bacon, cooked and drained
8-12" wheat tortillas
2 cups Gorgonzola cheese, shredded or crumbled
4 cups lettuce, shredded (iceberg recommended)
2 medium tomatoes, diced
2 sweet peppers, diced (green, red, yellow)
1 medium red onion, diced
1 medium cucumbers, sliced thin
2 1/2 cups creamy cucumber yogurt sauce (Tzatsikl sauce)

Directions:
1. Place wheat tortollias flat on a baking sheet.
2. Cover tortillas with chesse (approx. 1/4 cup each).
3. Bake at 350° for 5-7 minutes or until cheese begins to melt.
4. Remove from oven and immediately top evenly with:
- Patrick Cudahy Bacon (2-3 Slices each)
- 1/4 cup tomatoes each
- 1/4 cup peppers each
- Diced red onion
- Cucumber
- Shredded lettuce

5. Drizzle cucumber sauce evenly on all.
6. Fold tortilla in half, roll, and pin with olive garnished toothpicks and ct in half for entrée serving, quarters for appetizers.


Spanish Bean & Bacon Chili ^ back to list
You will need:
1 bag of Pinto beans
1 package of P.C. Double smoked Bacon cut into 1/4 inch pieces
2 Serrano peppers
3 Diced tomatoes
1 head of cilantro
1 red onion - finely chopped
1 full clove of garlic finely minced
2 Tbsp of ground Cumin
1 Tbsp of Salt
2 Tbsp of Sugar
4 small cans of Tomato sauce

Directions:
Thoroughly wash beans and remove any unwanted byproducts, place beans in large pot and fill 3/4 of the way. Cut P.C. Double smoked Bacon into 1/4 inch pieces and add to pot. Thinly slice Serrano peppers and add to pot. Dice tomatoes and add to pot. Remove stems of Cilantro and discard, finely chop cilantro, and add to pot. Add minced garlic, chopped onion, cumin, salt, sugaar, and tomato sauce to pot. Boil for at least two hours or until beans are fully cooked.
